Enjoy the vibrant flavours of this aromatic curry, tender diced beef is infused with the warm brown mustard seeds, chili flakes, coriander, cumin, and fennel seeds. The beef is slow cooked in a spicy tomato sauce, till the spicy sauce coats the beef perfectly. This spicy curry is served alongside warm Indian bread and cool refreshing raita, made with cucumber, yogurt, and zesty lemon.
This spicy curry takes a while to cook but is worth the effort for the delicious mix of flavours and spices. Dry fry the cumin, coriander, mustard and fennel seeds till dark brown and the aromas are released, and then grind to a fine powder and set a side. Cook the beef in the frying pan with a little oil till sealed and the meat is browned Set aside. Add the chilli, garlic and onions to the frying pan and lightly fry. Add the tomatoes, spices and bay leaves to the onion mixture cook till the tomatoes are soft, Add the beef pieces back into the pan with the water, turn the heat down and simmer, Cover and cook on the cooker top for 30 minutes stir occasionally. Remove from the heat and place in a casserole dish and bake. Cook till the beef is tender and falling apart and the sauce is thick and sticking to the meat. Serve the beef bhuna with a cucumber raita and warm Indian bread.
Spices - the dish is made with whole spices and seeds, the spices can be substituted with ground spices such as ground cumin powder
Fresh spices - ginger, green chilies and garlic - you can replace with pre prepared products such as garlic paste etc. If you don't have fresh chillies you can use chilli powder
Beef - any type of stewing beef is ideal
Tomatoes - we use fresh tomatoes for this recipe, you can use tinned tomatoes and if you want a stronger tomato flavour you can add tomato puree
This delicious slow-cooked curry is ideal for a special occasion, dinner with friends or a curry night, you can make it the day before as it takes longer to cook than most curries and the the flavours will develop overnight making the curry extra delicious. Store in the fridge overnight. It’s an ideal winter dish. The chicken thighs are so tender that its worth the extra time to cook. This recipe is not difficult to cook but it is time consuming so you may want to cook extra and freeze
