Black Bean Quesadilla with Mexican Salad Recipe

Spicy black bean quesadilla made with black beans, red onions, red peppers and mozzarella cheese. and flavoured with jalapenos and garlic. This delicious mixture is  encased in a tortilla wrap and fried till golden brown. The quesadilla are served with a Mexican salad with a lime and coriander dressing.

Recipe Ingreds

Tortilla

  • 1 whole bell pepper (red)
  • 0.5 tin tinned black beans
  • black pepper (to taste)
  • 1 cloves garlic
  • 0.5 tbsp sliced jalapenos
  • 50 grams mozzarella
  • 1 whole red onions
  • salt (to taste)
  • 0.5 tbsp sunflower oil
  • 2 single wraps

Salad

  • 0.5 whole avocado
  • 75 grams cherry tomatoes
  • 40 grams lettuce
  • 4 whole spring onions
  • 0.5 tin tinned sweetcorn

Dressing

  • black pepper (to taste)
  • 4 sprig fresh coriander
  • 1 cloves garlic
  • 2 tbsp olive oil
  • salt (to taste)
  • 0.5 whole lime
  • 0.5 tsp Clear honey

Recipe with pictures Steps

Step 1

  • peel and crush the garlic using the garlic crusher or chop finely
  • juice the lime
  • wash and finely chop the fresh coriander
  • make the dressing by mixing all the dressing ingredients together

Step 2

  • peel the avocado
  • chop the avocado into cubes
  • add to the dressing

Step 3

  • wash the lettuce leaves and place in a serving bowl
  • wash the cherry tomatoes and then slice in half
  • add to the bowl
  • wash and finely slice the spring onions
  • add to the bowl

Step 4

  • drain the sweetcorn
  • add to the bowl
  • add the avocado to the salad
  • stir to mix the ingredients
  • set a side

Step 5

  • heat the frying pan
  • add a spot of the oil
  • peel and slice the red onions
  • add to the frying pan
  • wash and chop the red pepper into matchsticks
  • add to the frying pan

Step 6

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • cook till soft
  • chop the jalapenos
  • add to the frying pan
  • Drain the beans and wash in cold water
  • add to the frying pan
  • mash roughly with a fork
  • season with salt and pepper

Step 7

  • slice the mozzarella
  • oil the large frying pan using the pastry brush
  • place a wrap onto the frying pan
  • add sufficient of the bean mixture to cover half the tortilla leaving a small border around the edge of the tortilla
  • add the cheese slices
  • fold the tortilla over
  • Gently cook for a couple of minutes

Step 8

  • turn the tortilla over
  • cook for a further minute or two
  • keep warm
  • repeat for each tortilla

Step 9

  • cut the tortilla into slices
  • serve with salad
