Chicken Chorizo Stew

Our Spanish casserole follows the traditional combination of
meat, beans and tomatoes that is typical of many stews eaten in Spain.
Sprinkle the paprika over the chicken thighs and cook
quickly, until the skin is golden brown and the meat is sealed, remove from the
pan and place in a casserole dish. Remove excess fat and then add the sliced
chorizo, garlic and chopped onions cook till the chorizo is crisp and the
onions are soft. Add the herbs Provencal and cook for a minute or two. Drain
the beans, and add them, with the tomatoes cook for 5 minutes. Add the stock
and cook for a further 5 minutes. Add
the tomato, chorizo and bean mixture to the chicken and slow cook in the oven
till the meat is tender.
This Spanish chicken stew is ideal for freezing, cook the stew and leave
to cool, place in a container and freeze. To reheat, remove from the freezer and
defrost then heat till piping hot.
This dish is a lovely comfort food perfect for those cold
winter nights, it takes a while to cook so we tend to make it on a weekend,
make extra and freeze for a quick meal during the week.
This recipe is perfect for all the family, its easy to cook
and packed full of meat and vegetable proteins. Chicken thighs are relatively
low-cost, and the addition of butter beans and chorizo makes this dish very
filling.
This tasty Spanish stew would make an ideal main course for a dinner party particularly a Spanish themed dinner.

bone and then mix it with the bean and chorizo gravy, then serve it

Chicken and chorizo stew has a spicy tomato flavour, the spice comes from
the paprika and the chorizo. The tomato gravy also has a deliciously herby
flavour from the herbs provincial, the butterbeans add extra texture and
flavour to the overall dish
