Jerk Sweet Potato & Black Bean Stew with Rice & Peas Recipe

A spicy Jerk butternut squash stew or curry with butternut squash, sweet potatoes, red peppers and black beans spiced with scotch bonnet chilli, allspice, cinnamon and nutmeg served this spicy Jamaican curry with coconut and aduki bean rice.


Recipe Ingreds

Rice

  • 1 tin tinned aduki beans
  • 0.25 tsp allspice
  • black pepper (to taste)
  • 250 ml coconut cream
  • 3 sprig fresh thyme
  • 1 cloves garlic
  • 1 tbsp olive oil
  • 1 whole onions
  • 100 grams basmati rice
  • salt (to taste)
  • 1 whole fresh scotch bonnet chilli
  • 1 whole spring onions
  • 0.5 cube stock cube veg
  • 5 grams brown sugar
  • 300 ml water (boiling)

Stew

  • 0.5 tsp allspice
  • 1 whole bell pepper (red)
  • black pepper (to taste)
  • 0.5 whole butternut squash
  • 0.25 tsp cinnamon
  • 1 whole fresh scotch bonnet chilli
  • 2 sprig fresh thyme
  • 0.25 tsp ground nutmeg
  • 1 whole onions
  • 1 tbsp soy sauce
  • 2 whole spring onions
  • 5 grams brown sugar
  • 1 whole sweet potato
  • 1 tin tinned tomatoes
  • 1 tbsp olive oil
  • salt (to taste)
  • 1 tin tinned black beans

Recipe with pictures Steps

Step 1

  • half fill a pan with water and boil
  • peel sweet potatoes , cut into cubes
  • add to the pan

Step 2

  • peel and chop the butternut squash into cube
  • add to the pan
  • cook for 10 mins

Step 3

  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan
  • cook for 3 to 4 mins

Step 4

  • wash and finely slice the spring onions
  • add to the frying pan
  • wash and slice the peppers into strips
  • add to the frying pan

Step 5

  • wash and finely chop the chilli
  • add to the frying pan
  • cook for 3 to 4 mins

Step 6

  • set the oven to 180C 350F or gas mark 4
  • wash and remove the thyme leaves from their stalks
  • add the herbs and spices to the frying pan

Step 7

  • Drain the butternut and sweet potato
  • add to the frying pan
  • cook for a minute or two

Step 8

  • add the tinned tomatoes, sugar, soy sauce to the frying pan and mix the ingredients
  • cook for a minute or two

Step 9

  • Drain the beans and wash in cold water
  • add to the frying pan
  • cook for a minute or two
  • taste and season with salt and pepper if necessary

Step 10

  • empty the contents of the frying pan into a casserole dish
  • place the stew in the oven
  • cook for 20 mins

Step 11

  • while the stew is cooking
  • add the stock cube to boiling water
  • add the coconut cream to the stock
  • Drain and rinse the beans

Step 12

  • heat the large pan
  • add the oil to the pan
  • wash the rice
  • peel and chop the onion(s) finely
  • add to the pan
  • cook for 3 to 4 mins

Step 13

  • wash and finely slice the spring onions
  • add to the pan
  • wash and finely chop the chilli
  • add to the pan

Step 14

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the pan
  • cook for a minute or two
  • add the thyme, allspice, rice, sugar, salt and pepper
  • add to the pan
  • stir to mix the ingredients

Step 15

  • add the stock enough to cover the rice plus a couple of cms deep
  • place one serving of rice onto a plate
  • Bring to the boil and boil for a few minutes
  • turn down the heat cook gently until rice is tender
  • add the beans
  • cook for a minute or two

Step 16

  • remove the stew from the oven
  • add the stew to the serving plate
  • serve immediately

Step 17

  • If cooking extra for the freezer store the extra stew and rice in a freezable container allow to cool and then place in freezer

How to make Jerk butternut squash stew with sweet potato and black beans 

Jamaican stew

A delicious Jamaican vegetable stew or curry,  packed with sweet potatoes, butternut, peppers, tomatoes, black beans and spring onions spiced with hot chilli, ground spices and thyme

Boil the sweet potatoes, butternut squash till soft, Fry the onions, bell peppers and spring onions till soft then add the chilli add the ground spices and thyme. Drain the sweet potato and butternut and add to the frying pan, add the tomatoes, sugar, and soy sauce. Add the black beans and season.  Place in a casserole dish and cook in the oven. 

Prep the Jamaican peas and rice

Lightly fry the onions till soft, add the chilli, spring onions, garlic and spices Add the rice, coconut milk and stock cook till the rice is soft mix in the aduki beans. Serve the rice and stew together

Freeze Jerk vegetable stew 

You can freeze this dish, cook the stew and rice and beans, place a portion of each into a freezer proof container and allow to cool before freezing. To reheat allow it to defrost and then heat till piping hot
