Carrot Pancakes with Greek Salad Recipe

Carrot pancakes spiced with fennel, cumin and coriander served with a traditional greek salad of cucumber, tomato, feta and olives coated in a lemon and oregano dressing.

Recipe Ingreds

Pancakes

  • 0.5 tsp baking powder
  • 1 whole carrots
  • 1 tsp cumin seeds
  • 0.5 tsp fennel seeds
  • 1 whole fresh chilli
  • 6 sprig fresh coriander
  • 50 grams gram flour
  • 1 tsp ground coriander
  • 2 tbsp olive oil
  • salt (to taste)
  • 2 whole shallots
  • black pepper (to taste)

Salad

  • 60 grams black olives
  • 100 grams cherry tomatoes
  • 0.5 whole cucumber
  • 30 grams feta cheese
  • 1 whole red onions

Dressing

  • black pepper (to taste)
  • 0.5 tsp oregano (dried)
  • 1 tsp fresh lemon juice
  • 2 tbsp olive oil
  • salt (to taste)
  • caster sugar (to taste)
  • 3 sprig fresh mint

Recipe with pictures Steps

Step 1

  • peel and finely chop the shallot(s)
  • wash and finely chop the fresh coriander
  • wash and finely chop the chilli
  • peel and grate the carrots
  • place all the ingredients in a bowl

Step 2

  • add the flour, baking powder, and spices to the bowl and mix together to form a thick batter
  • add a spot of water if necessary
  • season with salt and pepper
  • set a side

Step 3

  • squeeze the lemon(s) .
  • wash and finely chop the mint
  • mix the dressing ingredients together in a bowl

Step 4

  • wash the cherry tomatoes and then slice in half
  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • cut the feta cheese into cubes
  • peel and chop the onion(s) finely
  • slice the olives
  • mix the salad ingredients together
  • add the salad dressing to the salad and mix

Step 5

  • heat the oil in the frying pan
  • take a spoonful of the batter and place in the frying pan to form the pancake
  • shallow fry on both sides till golden brown
  • cook for 5 minutes

Step 6

  • place 2 pancakes per person on a serving plate
  • add the Greek salad and serve

How to make carrot pancakes with Greek salad

Peel and grate the carrots, finely chop the shallots, chilli and coriander, place in a bowl and add the cumin, fennel seeds,  ground coriander, baking powder and gram flour mix to form a thick batter season with salt and pepper . Make the dressing for the salad by mixing the lemon juice, oregano olive oil and chopped mint. Add salt, pepper and caster sugar to taste. Make the salad by chopping the olives, cherry tomatoes, cucumber, and feta cheese into bite size pieces, finely chop the red onion, mix the salad ingredients together and add the dressing. Lightly fry the pancakes till golden brown about 5 minutes each side. Serve the pancakes warm with the Greek salad

These delicious healthy pancakes are perfect in the spring, summer and autumn, we serve them with a traditional Greek salad but you could serve them with a coleslaw or as a burger or in a crisp pita bread. If you have friends coming round for lunch these savoury pancakes make the perfect veggie lunch treat. You can also make them smaller and serve as an appetiser or starter with a creamy feta dip. They freeze well so make extra and pop in the freezer, reheat in a dry frying pan or in the oven, and if your watching the pennies they are pretty cheap to make too

Tips for carrot pancakes

  • if you don't have any shallots, use a white onion
  • these pancakes taste better with gram flour but if you don't have any add plain flour
  • If the batter is to thick add a little water
  • Make sure the pancakes are cooked all the way through otherwise they will taste floury
