Duck stir fry with oriental vegetables

Duck, Orange and Honey Stir-Fry Recipe

A mouth wateringly simple duck stir fry, made with thin strips of duck breast marinated with garlic, ginger, soy sauce, honey and orange, Stir fried with a selection of delicious green vegetables, asparagus, broccoli, pak choi and spring onions served on a bed of noodles


Recipe Ingreds

Duck

  • 0.5 bunch asparagus
  • black pepper (to taste)
  • 120 grams broccoli
  • 2 fillet duck breasts
  • 120 grams pak choi
  • salt (to taste)
  • 2 tbsp sesame seeds
  • 4 whole spring onions
  • 1 tbsp sunflower oil

Marinade

  • 2 cm fresh ginger
  • 1 cloves garlic
  • 1.5 tbsp honey
  • 0.5 whole orange
  • 1 tbsp soy sauce

Step 1

  • zest the orange
  • peel and crush the garlic using the garlic crusher or chop finely
  • peel and grate the ginger
  • mix the garlic, ginger, honey, orange zest and soy sauce together in the rectangular pie dish

Step 2

  • skin the duck
  • cut into strips
  • place the meat in the marinade
  • refrigerate for at least two hours preferably overnight

Step 3

  • Take the duck out of the fridge
  • Squeeze the orange and set a side

Step 4

  • wash and chop the pak choi
  • wash and slice the asparagus
  • wash and cut the broccoli into florets
  • wash and finely slice the spring onions

Step 5

  • Heat the wok
  • toast the seeds in the pan
  • remove from the pan and set a side.

Step 6

  • return the wok to the heat
  • add the oil
  • remove the duck from the marinade add to the wok reserve the marinade
  • cook for 3 to 4 mins
  • remove from the pan and set a side.

Step 7

  • add the asparagus, broccoli, pak choi and spring onions to the wok
  • cook for 3 to 4 mins
  • add the remaining marinade
  • add the orange juice
  • cook for a minute or two
  • season with salt and pepper
  • Allow the sauce to thicken

Step 8

  • return the duck to the wok warm through

Step 9

  • share the contents of the pan equally between the serving plates
  • sprinkle with sesame seeds

How to make duck stir fry with orange and honey

Duck is a delicious alternative to the usual chicken breasts for a stir fry and this recipe uses duck breast strips, so it cooks quickly, 

Remove the skin from the duck breasts and cut the meat into strips, marinate in the ginger, garlic, soy, honey, and orange marinade. The skin is not used in this recipe, but if you love crispy duck skin, pop it in the oven to crisp and then cut it into thin strips and sprinkle it over the finished dish. Cut the asparagus, pak choi and spring onions into slices and the broccoli into small florets. Toast the sesame seeds in the wok and set aside. Remove the duck from the marinade, save the marinade. Stir fry the duck pieces and then set a side. Stir fry the vegetables add the marinade and orange juice to the vegetables allow the sauce to thicken then return the duck to the pan and cook for a minute or too.  Serve the stir fry duck in a bowl sprinkled with toasted sesame seeds and crispy duck skin

Recipe tips

  • Marinate the duck the night before for to maximise flavour
  • Cut all the vegetables before you start cooking so you don’t overcook any of them
  • If you’re in a hurry buy pre cut vegetables, try and get an oriental style vegetable mix
