Halloumi pie with pine nut and herbs

Halloumi Pie Recipe

A delicious Halloumi pie filled with grated halloumi, feta and mozzarella, pinenuts, figs, shallots and breadcrumbs. This delicious tart is flavoured with lemon, garlic, and fresh herbs:- parsley, mint and coriander.

Recipe Ingreds

Tart

  • black pepper (to taste)
  • 10 grams butter
  • 1 whole egg
  • 1 whole egg (yolk)
  • 60 grams feta cheese
  • 20 grams figs (ready to eat)
  • 2 sheets filo pastry
  • 3 sprig fresh coriander
  • 3 sprig fresh mint
  • 3 sprig fresh parsley
  • 1 cloves garlic
  • 50 grams halloumi cheese
  • 0.5 whole lemon
  • 50 grams mozzarella
  • 0.5 tbsp olive oil
  • 50 grams pine nuts
  • salt (to taste)
  • 2 whole shallots
  • 1 slices brown bread

Step 1

  • heat a frying pan
  • toast the pinenuts
  • until golden brown
  • set a side

Step 2

  • heat the frying pan with a little oil
  • peel and finely chop the shallot(s)
  • add to the frying pan
  • cook till soft

Step 3

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • cook for 2 minutes
  • set a side

Step 4

  • zest the lemon(s)
  • grate the halloumi
  • crumble the feta cheese
  • grate the mozzarella
  • add the cheeses to the bowl
  • mix the ingredients

Step 5

  • add the pinenuts to the bowl
  • add the shallot mixture
  • add the lemon zest
  • mix the ingredients
  • set the oven to 180C 350F or gas mark 4

Step 6

  • using a food processor blend the bread into fresh breadcrumbs
  • add to the bowl
  • wash and finely chop the fresh coriander
  • wash and finely chop the fresh parsley
  • wash and finely chop the mint
  • add the herbs to the bowl

Step 7

  • finely chop the figs
  • add to the bowl
  • add the egg(s)
  • add the egg yolk(s)
  • mix the ingredients
  • season with salt and pepper

Step 8

  • melt the butter in a small bowl in the microwave, or in a small pan
  • cut the filo to match the size of the oven proof dish
  • coating with melted butter using the pastry brush
  • place in the dish
  • Repeat twice more

Step 9

  • Place half the cheese mixture in the dish
  • spread evenly

Step 10

  • cut 3 more layers of filo
  • coating with melted butter using the pastry brush
  • place in the dish
  • add the remaining cheese mixture

Step 11

  • cut 3 more layers of filo
  • coating with melted butter using the pastry brush
  • place in the dish

Step 12

  • place in the oven
  • cook for 20 mins
  • until golden brown
  • remove from the oven

Step 13

  • cut into squares
  • serve immediately

How to make Halloumi pie

Fry the onions and garlic till soft, grate the mozzarella and Halloumi and crumble the feta, mix the garlic, onions cheeses, toasted pine nuts and lemon zest, Mix the chopped mint, parsley and coriander with the fresh bread crumbs add the herb and breadcrumb mixture to the cheese and onion mixture, add the chopped figs and eggs. Layer the filo pastry coated with butter and the pie mixture ending with a filo pastry layer. Bake in the oven till golden brown.

About our Middle eastern pie

This halloumi pie is based on the recipe for Borek. Borek is a flaked pastry tart filled with cheese and herbs and sometimes sprinkled with sesame or black onion seeds. Its origin is probably based in Turkey. There are a number of different variations to Borek, including the use of different cheeses, potatoes, and herbs. There are also meat versions that include beef or sausage meat and tomato sauces. There are also a selection of borek recipes that are vegetarian based and use spinach, leeks, courgettes and even nettles.
