Jamaican Jerk Chicken with sweet potato & bean stew Recipe

A delicious Caribbean jerk chicken stew, chicken thighs marinated in jerk spices, served with sweet potato, butternut squash, red pepper and black bean stew spiced with scotch bonnet chilli, allspice, cinnamon and nutmeg

Recipe Ingreds

Chicken

  • 4 portions chicken thighs

Marinade

  • 2 tsp allspice
  • black pepper (to taste)
  • 1 tsp cinnamon
  • 1 whole fresh scotch bonnet chilli
  • 3 sprig fresh thyme
  • 1 tsp ground nutmeg
  • 1 whole lime
  • salt (to taste)
  • 1 tbsp soy sauce
  • 2 whole spring onions
  • 10 grams brown sugar

Stew

  • 0.5 tsp allspice
  • 1 whole bell pepper (red)
  • black pepper (to taste)
  • 0.5 whole butternut squash
  • 0.25 tsp cinnamon
  • 1 whole fresh scotch bonnet chilli
  • 3 sprig fresh thyme
  • 0.25 tsp ground nutmeg
  • 1 whole onions
  • salt (to taste)
  • 1 tbsp soy sauce
  • 2 whole spring onions
  • 5 grams brown sugar
  • 1 whole sweet potato
  • 1 tin tinned tomatoes
  • 1 tbsp olive oil
  • 1 tin tinned black beans

Recipe with pictures Steps

Step 1

  • Make the marinade
  • peel and chop the onion(s) finely
  • place the herbs,spices, onions and scotch bonnets in the food processor and blend to a puree
  • squeeze the lime(s)
  • add the remaining ingredients
  • mix the ingredient in the rectangular pie dish

Step 2

  • place the chicken in the marinade
  • massage the marinade into the chicken
  • cover with cling film
  • refrigerate for at least two hours preferably overnight

Step 3

  • Take the chicken out of the fridge
  • set the oven to 180C 350F or gas mark 4
  • place chicken in the casserole dish
  • place in the oven
  • cook for 45 mins

Step 4

  • half fill a pan with water and boil
  • peel sweet potatoes , cut into cubes
  • add to the pan
  • peel and chop the butternut squash into cube
  • add to the pan
  • cook for 10 mins

Step 5

  • heat the olive oil in the frying pan
  • peel and chop the onion(s) finely
  • add to the frying pan
  • cook for 3 to 4 mins

Step 6

  • wash and finely slice the spring onions
  • add to the frying pan
  • wash and slice the peppers into strips
  • add to the frying pan
  • wash and finely chop the chilli
  • add to the frying pan
  • cook for 3 to 4 mins

Step 7

  • wash and remove the thyme leaves from their stalks
  • add the herbs and spices to the frying pan

Step 8

  • Drain the butternut and sweet potato
  • add to the frying pan
  • cook for a minute or two

Step 9

  • add the tinned tomatoes, sugar, soy sauce to the frying pan and mix the ingredients
  • cook for a minute or two

Step 10

  • Drain the beans and wash in cold water
  • add to the frying pan
  • cook for a minute or two
  • taste and season with salt and pepper if necessary

Step 11

  • empty the contents of the frying pan into a second casserole dish
  • place the stew in the oven
  • cook for 20 mins

Step 12

  • remove the chicken from the oven
  • pour the juices from the chicken casserole dish into a pan
  • add a small amount of boiled water to the casserole dish to lift any juices add to the pan
  • heat the pan with the juices to allow to reduce

Step 13

  • heat the frying pan
  • place the chicken skin side down
  • cook until the chicken is charred and crispy

Step 14

  • remove the vegetable stew from the oven
  • add the stew to the serving plate

Step 15

  • add two chicken thighs
  • and jerk sauce
  • serve immediately

Step 16

  • if cooking extra for the freezer place remaining chicken into a freezer proof container leave to cool for 1 -2 hrs then place in the freezer

step 17

  • if cooking extra for the freezer store the extra veg stew in a freezable container allow to cool and then place in the freezer

How to make Jerk chicken with sweet potato stew

This authentic Caribbean stew is deliciously warm and spicy, the chicken thighs are marinated in a selection of Jamaican spices and then slow cooked in the oven and served with sweet potato and bean stew; 

Jerk chicken marinade

To make the marinade add finely diced spring onion and scotch bonnet to a mini food processor with the cinnamon, thyme, nutmeg, and allspice and puree add the lime juice, sugar, soy sauce and salt and pepper pulse to mix. coat the chicken thighs and leave to marinate in the fridge 

Sweet potato and black bean stew 

Peel and chop the sweet potato and the butternut place in a pan of boiling water and cook for 10 minutes, while they are cooking chop the onion and gently fry in a frying pan add the diced scotch bonnet and sliced peppers and spring onions cook for 5 minutes, add the herbs and spices. Drain the vegetables and add to the frying pan with the tinned tomatoes and the sugar and soy sauce cook for five minutes. Add the drained black beans and season to taste, place in a casserole dish and cook for 20 minutes

Jamaican jerk chicken 

Remove the chicken from the fridge and cook in the oven for 45 minutes, then remove from the oven and drain the juices into a pan use a little boiling water to deglaze the cooking pot. Place the chicken thighs in a frying pan skin side down and brown till crisp. serve the chicken and stew together with the jerk sauce

Yes, you can freeze both the jerk chicken and the sweet potato and bean stew, so make extra and you will have the perfect homemade jerk stew in the freezer for those busy work nights. Just place the chicken and stew in a freezable container and allow it to cool before freezing
