Lemon and Thyme Drizzle Cake Recipe

A traditional lemon drizzle cake, with soft moist sponge flavoured with lemon and thyme, baked in a loaf tin and topped with the traditional crystalline crunchy sugar topping

Recipe Ingreds

Cake

  • 115 grams butter
  • 3 whole egg
  • 3 sprig fresh thyme
  • 2 whole lemon
  • 175 grams self raising flour
  • 175 grams caster sugar
  • 140 grams granulated sugar

Recipe with pictures Steps

Step 1

  • using a small amount of butter, grease the cake tin. cut out a oblong of grease proof paper the same size as the tin place in the tin. Cut a strip of paper to line the sides of the tin.

Step 2

  • zest the lemon(s)
  • squeeze the lemon(s) .

Step 3

  • break the eggs in to a bowl
  • beat the egg(s)
  • sieve the flour into another bowl

Step 4

  • wash and remove the thyme leaves from their stalks
  • finely chop the thyme

Step 5

  • mix the caster sugar and butter in a bowl
  • beat the butter and sugar mixture till pale and fluffy
  • add the lemon zest and the thyme
  • set the oven to 180C 350F or gas mark 4

Step 6

  • mix 1/3 of the beaten egg into the butter and sugar mixture
  • mix 1/3 of the flour into the mixture
  • Repeat until all the flour and egg is incorporated

Step 7

  • add half the lemon juice to the mixture
  • place in the cake tin
  • bake for 50 mins
  • the cake is ready when it start to come away from the sides
  • remove from the oven

Step 8

  • mix the remaining lemon juice with the granulated sugar
  • pour sugar mixture over the cake
  • leave for 10 minutes
  • remove from the tin and leave to cool on a rack

Step 9

  • slice the cake and serve

How to make lemon and thyme drizzle cake

This lemon-flavoured loaf cake is easy to make and with the crunchy sugar coating and thyme flavour it is extra delicious. Our Lemon drizzle cake does not stick strictly to the pound cake rules, there is a reduction in the sugar due to the sweetness of the sugar glaze. The cake is created in a traditional way by whisking together the butter and sugar, and the thyme and lemon zest are added. Once the butter and sugar mixture is light and fluffy the eggs and flour are added with half the lemon juice, place in the loaf tin and bake.  to make the lemon drizzle icing  mix together the remaining lemon and sugar to form a glaze and then poured over the cake and left to form a crust over the cake
