Lemon Layer Pudding Recipe

This mouth watering lemon self saucing pudding or surprise pudding , has a soft fluffy soufflé like sponge with a delicious rich lemon sauce underneath. The dish is the perfect light winter dessert ideal for a Sunday dinner pudding 

Recipe Ingreds

Lemon layer pudding

  • 50 grams butter
  • 2 whole egg
  • 1 whole lemon
  • 100 grams caster sugar
  • 300 ml milk
  • 50 grams self raising flour

Recipe with pictures Steps

Step 1

  • zest and squeeze the lemon(s)
  • chop the butter into cubes and add to the food mixer with the sugar
  • beat the butter and sugar mixture till pale and fluffy
  • add the zest and mix

Step 2

  • set the oven to 200C 400F or gas mark 6
  • beat the egg yolks
  • add the egg yolks and the flour a bit at a time to the butter and sugar
  • Repeat until all the flour and egg is incorporated

Step 3

  • add the milk gradually to the cake mixture
  • add half the lemon juice to the mixture

Step 4

  • whisk the egg whites till they form peaks
  • fold into the mixture

Step 5

  • grease the ramekins
  • add the lemon layer pudding mixture into the ramekins

Step 6

  • place the ramekins in roasting tin
  • add boiling water to the roasting tin, sufficient water to go half way up the ramekin dishes

Step 7

  • place the lemon layer puddings in the oven in the roasting tray
  • cook for 10 mins or until set
  • the lemon self saucing pudding should separate into a very light sponge and a custard
  • serve immediately

  • 2 medium bowl
  • 5 ramekins
  • 5 roasting tin

A simple to make sponge pudding, often known as lemon surprise pudding, The method for this pudding is similar to a normal cake, the butter and sugar are beaten till they are pale and creamy. the lemon zest is added. The eggs are separated and the yolks are added to the butter-sugar mixture with the flour. The milk that forms the sauce is s added to the mixture to form a smooth batter. The egg whites are beaten till light and fluffy, firm but not stiff and then folded into the sponge mixture. Pour the mixture into an ovenproof dish The lemon pudding is cooked in a bain marie till the sponge has just set, and the top is lightly browned. Serve hot straight out of the oven as if left to stand the sauce will soak into the sponge
