Mexican Chicken with Lime & Coriander Rice Recipe

Chicken goujons cooked in a delicious Mexican tomato chipotle sauce, flavoured with cinnamon, paprika, chipotle paste, fresh thyme and coriander. This Mexican chicken dish is served with lime and coriander rice.

Recipe Ingreds

Rice

  • 100 grams basmati rice
  • 1 whole lime
  • 4 sprig fresh coriander
  • 200 ml water (boiling)

chicken

  • 1 tsp chipotle paste
  • 1 whole red onions
  • 2 cloves garlic
  • 4 whole tomatoes
  • 1 tsp cinnamon
  • 1 tsp paprika
  • 5 grams brown sugar
  • 2 sprig fresh thyme
  • 6 sprig fresh coriander
  • 1 tbsp olive oil
  • 2 fillet chicken breasts
  • 0.5 whole lime
  • salt (to taste)
  • black pepper (to taste)

Step 1

  • place the rice in the pan
  • add the boiling water to the pan
  • cook till soft

Step 2

  • cut the chicken into strips (goujons)
  • heat a frying pan
  • add a spot of the oil
  • cook the chicken till golden brown
  • remove the chicken from the frying pan
  • set a side

Step 3

  • peel and slice the red onions
  • add to the frying pan
  • cook till lightly browned
  • peel and crush the garlic
  • add to the frying pan
  • cook for a minute or two

Step 4

  • wash and chop the tomatoes
  • add the tomatoes to the frying pan
  • cook for 2 to 3 minutes
  • till onions and tomatoes are lightly charred

Step 5

  • add the contents of the frying pan into the food processor
  • add the cinnamon, paprika, sugar and chipotle paste
  • wash and remove the thyme leaves from their stalks
  • add the thyme
  • blend the ingredients in a food processor

Step 6

  • return the chicken to the frying pan
  • add the contents of the food processor to a frying pan
  • squeeze the lime(s)
  • add to the frying pan
  • season with salt and pepper

Step 7

  • wash and finely chop the fresh coriander
  • add the coriander to the frying pan
  • cook for a minute or two
  • cover with a lid
  • cook for 5 minutes
  • check the chicken is cooked by piercing the chicken and checking the juices run clear

Step 8

  • rinse and drain the rice
  • squeeze the lime(s)
  • zest the lime(s)
  • wash and finely chop the fresh coriander
  • add the lime and coriander to the rice and place on a low light to keep warm

Step 9

  • place one serving of rice onto a plate

Step 10

  • remove the chicken from the pan
  • add to the plate

How to make Mexican chicken with rice

Make the chicken in chipotle sauce

Slice the chicken into goujons and seal the goujons in a frying pan cook till golden brown remove the chicken and set aside. Add the sliced red onion and cook till soft add the crushed garlic cook for a minute or two, then add the chopped tomatoes, cook for five minutes. Add the contents of the frying pan to a food processor with the thyme leaves cinnamon, paprika sugar and chipotle paste and blend. Return the chicken to the frying pan with the blended sauce and the lime juice and season with salt and pepper. Add the coriander and cook for 10 minutes

Make the Coriander and lime rice

Cook the rice in boiling water till soft, rinse and drain the rice return to the pan and add the lime juice and zest and chopped coriander
