Pan Fried Tarragon Chicken Recipe

Creamy tarragon chicken, pan fried chicken thighs cooked in a cider, tarragon and cream sauce served with mash potato and broccoli

Recipe Ingreds

Chicken

  • black pepper (to taste)
  • 4 fillet chicken thighs boneless
  • 100 ml cider
  • 100 ml double cream
  • 3 sprig fresh tarragon
  • 2 cloves garlic
  • 1 tbsp olive oil
  • salt (to taste)
  • 2 whole shallots
  • 0.5 cube stock cube chicken
  • 100 ml water (boiling)
  • 10 grams butter

Potatoes

  • black pepper (to taste)
  • 10 grams butter
  • 20 ml milk
  • 400 grams potatoes
  • salt (to taste)

Veg

  • 40 grams broccoli

Recipe with pictures Steps

Step 1

  • peel the potatoes
  • roughly chop the potatoes
  • half fill a pan with water and boil
  • add the potatoes
  • cook for 20 mins
  • or till soft

Step 2

  • while the potatoes are cooking
  • add the stock cube to boiling water
  • heat the olive oil in the frying pan
  • Add the chicken
  • cook for 5 minutes

Step 3

  • while the chicken is cooking
  • peel and finely chop the shallot(s)
  • peel and crush the garlic using the garlic crusher or chop finely
  • wash and finely chop the tarragon

Step 4

  • turn the chicken over
  • cook for a further 5 minutes
  • set a side to rest for 5 minutes keep warm

Step 5

  • add the butter to a new frying pan
  • Add the onions to the frying pan and cook until soft
  • add the garlic
  • cook for a minute or two

Step 6

  • return the chicken to the frying pan
  • add the cider cook until half the cider has evaporated
  • add the stock
  • simmer for 10 minutes

Step 7

  • drain the potatoes
  • add the butter and milk
  • mash the potatoes
  • season with salt and pepper
  • place mash potato in an oven proof dish
  • heat the grill
  • place the mash potato under the grill
  • cook till golden brown

Step 8

  • remove the chicken from the frying pan
  • Add the cream to the frying pan
  • cook till the sauce thickens
  • stir in the tarragon
  • season with salt and pepper

Step 9

  • wash and cut the broccoli into florets
  • cook in a microwave or pan for 2 to 3 minutes

Step 10

  • slice the chicken diagonally
  • add the tarragon sauce

Step 11

  • add a portion of potatoes to the serving plate
  • serve immediately

How to make Creamy Pan-fried tarragon chicken

Fry the chicken breasts in a frying pan till golden brown on both sides and for about 5 mins on each side, set the chicken aside. Add the chopped shallots and the crushed garlic to the pan with a little butter and cook till soft, return the chicken to the pan and add the cider allow the alcohol to evaporate and then add the stock, simmer for 10 minutes. Remove the chicken and set aside, add the cream, and allow the sauce to thicken then add the tarragon and season to taste. Slice the chicken diagonally and then pour the sauce over the chicken serve with mashed potato and steamed broccoli
