Strawberry & Passion Fruit Cupcakes Recipe

These delicious strawberry cheesecake cupcakes with passion fruit are made with chunks of fresh strawberries baked inside a vanilla sponge cupcake, and topped with a cream cheese frosting flavoured with passion fruit and sprinkled with a digestive biscuit crumb.

Recipe Ingreds

Cupcakes

  • 2 tsp baking powder
  • 60 grams butter
  • 50 grams digestive biscuits
  • 2 whole egg
  • 160 ml milk(whole)
  • 180 grams plain flour
  • salt (to taste)
  • 150 grams strawberries
  • 210 grams caster sugar
  • 1 tsp vanilla extract

Topping

  • 50 grams butter
  • 125 grams cream cheese
  • 1 whole passion fruit
  • 300 grams icing sugar

Recipe with pictures Steps

Step 1

  • set the oven to 165C 365F or gas mark 3
  • cut the butter into cubes
  • add the butter and sugar to the food mixer

Step 2

  • sieve the flour
  • add the flour, salt and baking powder to the food mixer
  • beat till blended together
  • add the vanilla extract

Step 3

  • place the food mixer on medium speed
  • add the egg
  • mix together
  • slowly add the milk
  • beat till blended together

Step 4

  • wash the strawberries
  • dry the strawberries
  • hull the strawberries
  • chop the strawberries into small chunks

Step 5

  • place the paper cases into the tray
  • share the chopped strawberries equally between the cases
  • add the cupcake mixture to the cases
  • cook for 25 mins or until golden brown and bounces back when pressed
  • test the cake using a skewer it should come out clean
  • Leave to cool in the tin for 10 minutes

Step 6

  • place the cupcakes on a wire tray to cool fully
  • put the biscuits in the food processor and blend to a crumb
  • set a side

Step 7

  • when the cupcakes have cooled
  • sieve the contents of the passion fruit into a small bowl to remove the seeds
  • combine the passion fruit and the cream cheese in a bowl

Step 8

  • beat the butter and sugar mixture
  • mix the butter mixture and cream cheese mixture together don't over beat as it will become runny

Step 9

  • Spread or pipe the passion fruit and cream cheese topping onto the strawberry cupcakes
  • sprinkle with biscuit crumbs

How to make strawberry cheesecake and passion fruit cupcake

Cream the butter and sugar together, add the flour, baking powder and vanilla extract and blend. Add the eggs and then the milk slowly bit by bit. Cut the strawberries into chunks share the chunks between the cupcake cases, add the sponge and bake in the oven till golden brown. Crush the digestives into crumbs. Sieve the passion fruit to remove the seeds, combine the cream cheese with the passion fruit puree. Cream together the butter and sugar and mix with the cream cheese mixture . Top the cupcakes with the frosting and sprinkle with the biscuit crumb.
