Butter Bean, Celeriac and Parmesan Soup Recipe

A deliciously creamy celeriac and butter bean soup is made with butter beans and peppery celeriac flavoured with crushed caraway seeds,  blended till smooth and then topped with chopped parsley and finely grated parmesan

Recipe Ingreds

soup

  • black pepper (to taste)
  • 20 grams butter
  • 1 tin tinned butter beans
  • 1 tsp caraway seeds
  • 200 grams celeriac
  • 4 sprig fresh parsley
  • 400 ml milk
  • 1 tbsp olive oil
  • 2 whole onions
  • 30 grams parmesan or pecorino cheese
  • salt (to taste)
  • 1 cube stock cube veg
  • 700 ml water
  • 2 rolls crusty bread rolls

Step 1

  • peel and chop the celeriac
  • peel and chop the onion(s) finely

Step 2

  • heat the butter and the oil together in the pan
  • Add the onions and celeriac to the pan
  • cook for 10 mins

Step 3

  • place the caraway seeds in a mortar and pestle
  • crush lightly
  • add the caraway seeds to the pan
  • cook for 5 minutes

Step 4

  • add the stock cube to boiling water
  • add the stock to the pan
  • cook for 15 mins to 20 mins
  • cook till soft

Step 5

  • add the milk to the soup
  • Drain the beans and wash in cold water
  • add the beans to the soup
  • cook for 5 minutes

Step 6

  • remove the soup from the heat
  • liquidise to a puree
  • if the soup is to thin leave on the heat till it reaches the consistency you require

Step 7

  • if cooking extra for the freezer
  • remove the extra and set aside
  • store the soup in a freezable container allow to cool and then place in freezer

Step 8

  • grate the parmesan, add to the butter bean soup
  • taste and season with salt and pepper if necessary

Step 9

  • wash and finely chop the fresh parsley
  • ladle the soup into serving bowls
  • Sprinkle with parsley
  • serve with crusty rolls

How to make butter bean and celeriac soup

This delicious recipe uses butter beans as its base ingredient, they have a rich savoury taste, which combines beautifully with the peppery celeriac and the parmesan and you have a really tasty soup

Soften and lightly caramelise the onions and celeriac in a pan, add the caraway seeds and lightly cook before adding the stock. Simmer until the vegetables are soft. Rinse and drain the tinned butter beans add to the pan with the milk. Puree the soup and add the parmesan. Serve with crusty rolls and a sprinkle of chopped parsley. For simplicity use tinned butter beans, you can use dried, but you will need to pre cook them first.

Can you freeze celeriac butter bean soup 

This soup can be stored in the fridge for 3 days or in the freezer for 3 months, we recommend you store it before you add the parmesan as the saltiness of the cheese can dominate the taste particularly when frozen. Just store in airtight container prior to adding the parmesan, and then on reheat add the cheese, stir and allow the parmesan to melt before serving

This soup is the perfect winter starter or light evening meal, and ideal for vegetarians. It has a sophisticated taste and would be ideal as a starter for a dinner party served with crusty white or brown rolls. Alternatively serve as a deliciously filling lunch
