Savoury vegetarian baklava with butternut squash and tomatoes

Butternut Squash & Tomato Baklava Recipe

Our mouth-watering savoury baklava is created using soft layers of butternut squash and warmly spiced tomato sauce encased in crisp filo pastry, baked till golden brown and then drizzled with melted honey. Serve with a delicious green salad

Recipe Ingreds

Tart

  • black pepper (to taste)
  • 25 grams butter
  • 0.5 whole butternut squash
  • 1 tsp cinnamon
  • 3 sheets filo pastry
  • 0.5 tsp ground ginger
  • 2 tbsp honey
  • 1 whole onions
  • salt (to taste)
  • 4 whole tomatoes
  • 0.5 tsp turmeric
  • 1 tbsp olive oil

Salad

  • 100 grams cherry tomatoes
  • 0.5 whole cucumber
  • 40 grams Salad leaves

  • set the oven to 180C 350F or gas mark 5
  • peel and chop the butternut squash into cube
  • lightly coat the baking tray with some of the oil using a pastry brush
  • add the butternut squash cubes to the Baking tray and coat the cubes in oil
  • place in the oven
  • bake for 15 minutes turning once part way through cooking

  • half fill a pan with water and boil
  • prick tomatoes and place in boiling water for 5 mins

  • heat the remaining oil in the frying pan
  • peel and chop the onion(s) finely
  • Add the onions to the frying pan and cook until soft

  • drain the tomatoes and place in cold water
  • while the onions are cooking
  • remove the skins from the tomatoes
  • chop tomatoes removing the hard central core

  • add the cinnamon, turmeric and ginger to the onions cook for 1-2 minute on a low heat

  • add the chopped tomatoes to the frying pan
  • cook for 5 mins
  • add 1/3 of the honey to the tomatoes
  • taste and season with salt and pepper if necessary

  • melt the butter in a small bowl in the microwave, or in a small pan
  • place the three sheets of filo on some cling film, cut into thirds or halves (based on size of your pie dish). Cover with cling film to stop it drying out while you create the baklava
  • coat the pie dish with butter using the pastry brush
  • coat each layer of pastry with melted butter using the pastry brush
  • add couple of layers of pastry to form the base

  • Take the butternut squash out of the oven, check it is soft
  • place a layer of tomato into the pie dish then a layer of roasted butternut squash . Then add 3 layers of filo pastry coat with butter. Then repeat the layers ending with a filo layer.
  • Place an additional layer of filo pastry on to the top and brush with butter, cut a criss cross pattern on the top to create diamond shapes
  • place in the oven
  • cook for 15 mins to 20 mins

  • While the baklava is cooking
  • wash mixed leaves and place in a serving bowl.
  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • sprinkle over the salad leaves
  • wash the cherry tomatoes and then slice in half
  • sprinkle over the salad leaves

  • place the remaining honey in a bowl or pan and melt in the microwave or on the stove
  • remove the baklava from the oven cut the baklava and place on a serving plate , pour over some honey and serve with salad

Ingredients for tomato and butternut baklava

Butternut squash - butternuts have a sweet nutty taste, which goes well with the tomatoes in this recipe they are roasted to add an extra smoky flavour. If you don't have butternut squash you can substitute other squashes like acorn squash or any of the other smaller squashes

Tomato - this recipe uses fresh tomatoes as it needs that extra tang you don't get with tinned tomatoes, if you need to use tinned tomatoes, then try tinned cherry tomatoes

Spices - the spices for this dish are quite sweet cinnamon, turmeric and ginger  these spices all go well with honey and add an extra dimension to the dish 

Honey - honey can come in many different flavours for this dish use plain honey and avoid flowery or fruity honey for this dish 

What is Baklava

It is traditionally a sweet dish made with filo pastry chopped nuts and honey, its exact origin is unknown, but it is assumed to come from the middle east region or Turkey/Greece. The baklava that we know today is thought to come from Istanbul. In recent years there have been many new savoury recipes for baklava as the filo and honey mixture lends itself well to many savoury dishes.
