Simple Smoky Bacon and Halloumi Cheese Hash & Salad

Smoked Bacon Hash with Mixed Salad Recipe

A mouth watering bacon and halloumi hash, smoked bacon and halloumi cheese squares lightly fried and mixed with a hash of potatoes, leek, white cabbage and cherry tomato flavoured with garlic, fresh ginger, cumin and chilli. This halloumi and bacon hash is served with a green salad coated in a tomato dressing


Recipe Ingreds

Hash

  • black pepper (to taste)
  • 125 grams green cabbage
  • 100 grams cherry tomatoes
  • 0.25 tsp chilli flakes
  • 0.5 tsp cumin seeds
  • 3 cm fresh ginger
  • 1 cloves garlic
  • 60 grams halloumi cheese
  • 1 whole leeks
  • 1 tbsp olive oil
  • 270 grams potatoes
  • salt (to taste)
  • 4 slices streaky bacon (smoked)

Salad

  • 0.5 whole bell pepper (green)
  • 0.5 whole cucumber
  • 40 grams Salad leaves

Dressing

  • black pepper (to taste)
  • 1 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp pesto
  • 1 tbsp red wine vinegar
  • salt (to taste)
  • 2 grams granulated sugar
  • 0.5 tbsp tomato puree
  • 20 ml water

Recipe with pictures Steps

Step 1

  • half fill a pan with water and boil
  • peel the potatoes
  • roughly chop the potatoes
  • place the potatoes in the pan cook gently till the potatoes are soft
  • while the potatoes are cooking

Step 2

  • Make the tomato dressing by mixing together the olive oil, red wine vinegar, garlic (crushed) tomato puree, pesto, sugar water in a bowl
  • season with salt and pepper and sugar to taste

Step 3

  • wash and chop the cabbage into fine strips
  • wash the leeks
  • remove the top and bottom of the leek(s)
  • slice the leeks

Step 4

  • add half the oil to the frying pan and heat
  • drain the potatoes
  • add the potatoes to the frying pan
  • cook till golden brown

Step 5

  • add the remaining oil to the frying pan and heat
  • add the leeks
  • cook for a minute or two
  • add the cabbage the the frying pan
  • cook for 5 mins

Step 6

  • peel and crush the garlic using the garlic crusher or chop finely
  • add to the frying pan
  • peel and grate the ginger
  • add to the frying pan
  • cook for a minute or two

Step 7

  • wash the cherry tomatoes and then slice in half
  • add the tomatoes to the pan
  • grind the spices in the mortar and pestle
  • add the spices to the frying pan
  • taste and season with salt and pepper if necessary
  • cook for 5 minutes
  • while the hash is cooking

Step 8

  • heat the other frying pan with a little oil
  • cut the bacon into squares add to the frying pan and cook till crisp
  • place on kitchen paper
  • set a side
  • slice the halloumi, add to the frying pan and cook till golden brown in each side

Step 9

  • wash mixed leaves and place in a serving bowl.
  • place a cross on the top of the cucumber
  • then slice the cucumber to form quarters
  • sprinkle over the salad leaves
  • wash and chop the green pepper(s) into small pieces
  • sprinkle over the salad leaves

Step 10

  • serve the hash with the cheese and bacon
  • add the salad and dressing
